Marcella Hazan's pasta sauce
So simple. Butter, tomatoes, onion, salt. Excellent. Long slow simmering. Parmigiano reggiano sprinkled over.
That so reminds me of one summer day when we were building our house. The land was really rough then, and our van slid in the mud after a rain and was stuck. We'd been here several days and were pretty much out of food. We had a pitiful garden but I was able to find an onion, a ratty cabbage head and a few sad tomatoes. Cooked them all with butter, water, salt and pepper. Most delicious soup ever!
